Baked chicken in kefir marinade

Plain kefir or yogurt (3-4 cups)
1 teaspoon of honey
1 squished garlic
1.5 teaspoons of chicken curry
1 teaspoon of lemon
6-12 Chicken thighs or 4 chicken breasts, cut into 2-3-inch chunks or whole
Salt, pepper
  1. Mix all the ingredients together, add chicken pieces
  2. Marinate the chicken for 4 hrs
  3. Preheat oven to 400 degrees. Arrange the chicken pieces skin-side up in the roasting pan (discard access marinade), so the largest pieces are in the center and there is a little room between pieces so they aren’t crowded in the pan.
  4. Cook for 30 minutes at 400°F. Then lower the heat to 350°F and cook for 10-30 minutes more (approximately 14 to 15 minutes per pound total cooking time) until juices run clear (not pink) when poked with a sharp knife or the internal temperature of the chicken breasts is 165°F and the thighs 170°.
